Quinoa Mexi Bowl



Quinoa Mexi bowl for dinner


2 Cups of Tri-Colored Quinoa

2 Cans of Black Beans

1/2 Cup of Frozen Bag of Chopped Onions and Red/Green peppers

2 Frozen Garlic Cube

2 Frozen sauteed onion cube

Salt and Pepper

Onion Powder

Garlic Powder

1 Jar Salsa

Handful of Cilantro

1 Avocado

1 Chopped Green Pepper

1 Bag of Spinach

Mexican cheese as topping

Fat Free Sour Cream or Plain Yogurt


Cook Quinoa as directed and set to the side

Cook Black Beans in pan with frozen onions, garlic and add all spices to your liking

Grill Chicken strips in pan with 1 Tbsp of Olive oil(or real butter), shake on Salt and Pepper, Garlic Powder and Onion powder to both sides.

Chop Veggies


Layer ingredients, Quinoa as base, then beans, spinach, chicken, veggies, salsa, and top with a dollop of sour cream!
