I’ve always loved Westerns. Growing up, I watched John Wayne movies every time I would visit with my grandparents, but my all-time favorite is "Westward the Women." It’s rare to find, but occasionally it airs on TCM or AMC Classics. The film tells the story of cowboys out west seeking wives, so they’d reach out to cowboys back east to bring women westward. Even though it’s fictional, I imagine things like that really happened back then. The women had to toughen up, taking on roles traditionally held by men—caring for horses, driving wagons, and shedding their dresses for practical clothing. They even had to leave behind beautiful outfits, accessories, toiletries, and home goods meant to make a house feel like home.
When I was super young, my brother and uncle(he was only a year older) would play Cowboys and Indians and dress up to match the scene. We used acorns to pelt each other with or have pine cone wars. Our imaginations would run wild. I remember always playing outside for hours and we would come in to get showers and my grandmother would have some yummy southern dish waiting and either homemade biscuits or cornbread to go with the meal.
While I watch Westerns now and feeling all the outdoor vibes, I love cooking up Cowboy Soup! It's super simple to make but very filling and nutritious and takes me back to my childhood.

What Is Easy Cowboy Soup?
Imagine the rugged charm of the Wild West captured in a bowl. Cowboy Soup is a hearty, no-fuss dish that combines tender ground beef, savory vegetables, zesty tomatoes, and flavorful seasonings. Cowboy Soup Ingredients:
1 pound ground beef
Four or five golden potatoes
2 32 oz containers of Beef Broth
1 cup celery(or 4 stalks)
1 1/2 cup carrots
2 TSP Minced garlic
1/2 cup onions(I had green onions on hand but I usually use a yellow onion)
1 can tomato sauce
1 can Black Eyed Peas
Salt and pepper to taste
1 tablespoon Worcestershire sauce
1 tablespoon butter
1 tsp olive oil (to sautéed veggies)
1 Tsp Oregano
1 Tsp Paprika
1 Tsp cumin
1 Tsp or Sprinkle of cayenne pepper(depending on how much heat you like)
Step 1: Let’s Get Started:
In a large pot, brown the ground beef over medium heat. Drain excess fat. Set to the side
Chop carrots, onions and potatoes and set to the side
Rinse Can of Black beans and set aside with chopped veggies
Add butter and saute' garlic and onions to pan for another minute until done.
Add Olive oil and veggies to garlic and onions and saute' everything together.
Pour in the tomato sauce, beef broth then season with seasonings, salt and pepper and worcheshire sauce to pan.
Bring to a boil, then reduce heat and simmer for 30 minutes, allowing the flavors to meld.
Serve hot with crusty bread or cornbread on the side.

Pro Tip:
For an extra cowboy-approved touch, sprinkle cilantro or chopped green onion or shredded cheddar cheese on top. Want more heat? Toss in some jalapeños.
