Happy Thursday babes!!! Want an easy lunch idea?? Prep some salads this weekend in a mason jar! They give you the perfect portions and make meal prep easy, what southerner doesn't already have a 1000 mason jars? I know I do. This one is also really good when you're tired of the boring turkey sandwich but still need to meet your protein goals and feel good about it at the same time. I would love to hear if you make this one. My husband loves so it so I make this one often!
Christina's Cannellini salad
1 Can of White Cannellini Beans
Bag of Baby Spinach
1 Organic Hot House Cucumber quartered
3 Cups Grape Tomatoes cut in half
Pink Himalayan salt to taste
Pinch of Pepper
1 Tbsp real butter
1 Tbsp minced garlic
1/4 Cup Purple onion chopped finely
1/3 Cup chopped Sharp white cheddar
For dressing:
4 Tbsp Red Wine Vinegar
4 Tbsp Extra Virgin Olive oil
Mix well and top on salad when ready to eat
Directions:
Sauté 3 tbsp purple onion and garlic in 1tbsp real butter over medium heat for 2min. Add a
Pinch of pink Himalayan salt(or to taste) then
Add beans and cook for 3 minutes, set to side.
Let Beans cool.
While Beans are cooling, chop Tomatoes in half
and quarter Cucumbers, chop white cheddar cheese in small squares set to side.
Layer Mason jar as follows, Cannellini Beans, cucumber, tomato, extra red onion(that was leftover), handful baby spinach, top with white cheddar cheese. Enjoy!!!!
