Light and flavorful Tomato and Cucumber Summer Salad
There's nothing better than serving up a delicious Fresh Summer Salad in the 80-degree weather. Here in the South, you will see Farmer's Markets and people on the side of the road selling all kinds of fruits and veggies from their Veggie Stands. I love stopping and grabbing luscious tomatoes, crisp cucumbers, and crunchy green onions for this quick side dish.

My mother-in-love Linda first introduced me to this recipe, when she moved from NY to Georgia. We were grilling out and she wanted to make a quick salad. What I loved about it most, is it's a salad without the lettuce. It can be made quickly with just a few ingredients and tastes so delicious. Be a hit at your next get-together with this quick and delicious side dish.
